Hello Everyone,
I am honored to be a contributor to Ash BBQ's Blog and bring you a new and hopefully exciting source of content. My background is diverse and unlike many others but I'll save the long history for a conversation over a beer or glass of wine sometime (we now ZOOM like crazy!) as I love great conversation!
I have been cooking and collecting wine for the past 25 years. For the past 5 years I have built my outdoor cooking area which is made up of a Yoder YS-640 Smoker, a PK Grills PK360 Charcoal Grill/Smoker and just replaced my aging gas grill with the new Weber Genesis II-350. My sous vide is done using a Joule sous vide machine, and I use a kitchen with both Viking gas oven and gas cooktop along with a separate Viking electric oven.
My current main focus (among others) is on dry aging and cooking only high quality meats. I recently purchased a grass fed and finished Black Angus cow and processed my own meat which has allowed me to achieve the freshest and highest quality beef one can get (not even close to market meats or Costco). My recent foray into Mangalitsa (Google it for some very interesting history and information about the Mangalitsa) pig will bring my pork dishes to a whole new level. This pig is extremely rare and only produced by a handful of ranchers in my area with a tiny harvest of only a few pigs per month. It is known as "The Kobe Beef of Pork".
My goal on this blog is to bring education and information on Wine, Sous Vide and Smoking as well as some appetizers which are always fun to make prior to a dish. I have written many recipes for Dr. Bill's Cane & Maple Syrup in New Orleans, LA who sponsors my YouTube channel. I fell upon their syrup during my last visit to New Orleans and they feel upon me, so it's been a match made in heaven!
